products smaller than loaves or cakes, with a wide range of characteristics, but similar ingredients, that is, flour, water or milk, salt, sugar, shortening and leaveners. May be made from batters, doughs and pastry using a variety of cooking methods. Examples are scones, muffins, doughnuts, waffles, meringues, brandy snaps, and hotplate goods such as pikelets and pancakes.
