complex molecules composed o£ between 20 and thousands of amino acids linked together in a chain. The order of the amino acids in any given protein chain affects the way the protein works. There are two major classes of proteins: structural and biologically active. Structural proteins form important structures such as muscles, tendons, skin, hair and nails. Biologically active proteins include the biological catalysts (enzymes), messengers such as hormone and those proteins involved in transport.
