also known as crepes, blinis, flapjacks, griddle-cakes, and hot-cakes. The batter is made from flour, milk or water, eggs, and oil or melted butter, and fried on a hotplate. Thickness and diameter vary; crepes are thin and delicate, whereas American pancakes are thick and may have fruit in the mixture. A versatile product, sometimes served with maple syrup and cream, or with a savoury filling.
