thin, circular, golden brown wafer that is rolled into a cylindrical shape directly after baking, allowed to dry an become crisp then filled with cream. They have a perforated surface and tend to attract moisture, causing them to become soft and sticky after a while. Ginger is the main flavour used. Small baskets, cones and decorative pieces are also made with brandy snap mixture. Traditional English product served at afternoon tea or as a dessert.
