form of meringue to which a gelling agent such as gelatine, agar or vegetable starch is added. Contains a large amount of sugar syrup, gelatine and air and is classed as a foam type icing. Comes in a variety of colours and usually flavoured with vanilla. Used as a filling, or as a topping sprinkled with coconut or covered with chocolate icing.
