(a) refers to the need for ingredients in a recipe to balance. Altering the amount of any ingredient changes the balance of the recipe. In cakes, ingredients such as flour and eggs, which give structure, need to be balanced with those that weaken and tenderise, such as fat and liquid. Dry and liquid ingredients also need to be balanced; (b) piece of equipment used to weigh ingredients.
